In 2018 I was diagnosed with endometriosis. My body was constantly in severe pain. I experimented with various types of conventional medications but none of them had any noticeable effect. A year later I made the conscious decision to make a complete change to my diet through personal research with books. I began my journey for a healthier and more nourishing diet to help my body better cope with the effects of endometriosis. After three months I finally found relief from the constant pain in my body. Ever since that moment I vowed to never look back. I understood that this was more than just a temporary diet - it would become a permanent lifestyle. I had experienced a profound transformation like I was reborn and would do everything in my power to never feel that type of pain again.
After a while I grew bored with my food and felt left out during family meals. My food felt repetitive and bland. I missed my Mexican culture’s flavors so much, my mouth would water at the smell of the familiar aromas. I craved these foods that were only available made in the ‘traditional’ way: with animal products. I began to experiment with my food and incorporating the same spices and recipes to my fresh and plant-based ingredients. I realized I did not need meat at all for these traditional meals I had ate my whole life. I continue to learn how to replicate cravings and translate them into their plant-based version.
I want to share this feeling of nostalgia & comfort to everyone who tries our food. Eat what you haven’t tasted in years (like me) or maybe find yourself also liking a healthier version of one of your favorite meals. Whichever one it is, I hope every bite brings you as much happiness as it has to me.
